A passion for craftsmanship!

The butcher’s shop on rue du Milieu in Yverdon-les-Bains has been an established institution for decades.

Arthur Paillard and his wife first took over the business in 1964, handing it over to their son and daughter-in-law Jacques and Martine Paillard in 1991. Father and son Paillard worked together for many years, developing recipes for the artisanal products they sell on their stall, such as traditional sausage and cabbage sausage. They have also set up and worked with a network of suppliers in the region to offer the best quality to their customers and to control all stages of production.

After many years behind the counter, Jacques Paillard is looking for a successor.

In 2017, Leonel Costa and his partner took over the business, which became Costa Butchery. Leonel Costa began his career as an apprentice butcher in his family’s butcher shop in the heart of the village where he spent his childhood.

For over 15 years, Leonel Costa has worked in both small family-run butchers’ shops and large chains. These diverse experiences have enabled him to see all aspects of the butcher’s trade, and to realize that his goal is to work for himself.

Leonel Costa finds in Jacques Paillard and his establishment the same love and vision of the butcher’s trade. Working daily in collaboration with Jacques Paillard, the two sharing their ideas, Leonel Costa has retained the same values, the same working methods, the same suppliers and the same traditional recipes, while adding his own personal touch and a touch of modernity to his products.

The Costa butcher’s shop offers a wide choice of home-made products, made from local meats, such as pâtés en croûte, various terrines, foie gras, sausages, butcher’s braids and brochettes, to name but a few.

Leonel Costa’s vision is to promote local trade and offer quality products while taking animal welfare into account. In a short space of time, Leonel Costa has won the trust and loyalty of his customers. Thanks to his hard work and his love of his trade, he quickly succeeded in developing his business by constantly offering new and seasonal products, to the great satisfaction of his customers’ palates!
