To guarantee quality meat, we favor short supply chains.
We have selected three breeds of heifer: Blanc Bleu Belge, Limousin and Blonde d’Aquitaine, all bred by the Vuillermet family in Montalchez.
The heifers are bred in the open air and brought to the Creux-du-Van pastures in summer (May to August).
Once the animal has been selected, its meat is shaved for at least two weeks before being offered for sale.
