Swiss beef
To guarantee quality meat, we favour short supply chains.
We have selected three breeds of heifer: the blanc bleu belge, the Limousin and the Blonde d'Aquitaine, all from the Vuillermet family farm in Montalchez.
The heifers are reared outdoors and taken to the Creux-du-Van pastures in the summer (May to August).
Once the animal has been selected, its meat is matured for a minimum of two weeks before being offered for sale.
